It’s almost weekend, but hey….let’s first enjoy this Thursday’s light and hearty Eggplant, chicken and chickpea stacked oven baked lunch.
What do you need? Eggplant slices, extra virgin olive oil (#EVOO), minced chicken, chickpeas, and lots of cilantro, sea salt and ground black pepper. Bring color with the juicy tomato wedges and the bonus to this dish is the homemade hummus. Word of caution: please be generous with the tahini 🙂
Drizzle EVOO on eggplant slices, sprinkle SS&P(Sea Salt & Pepper), generously cover with fresh cilantro and get baking for 15 minutes. Season minced chicken with organic stone ground mustard #TreeOfLife, salt free all-purpose seasoning #Frontier, add some truffle sauce, chickpeas, lots of cilantro finish with SS&P and spread thinly in oven dish then get baking for 15 minutes.
